Simple Eclairs with Easy Filling

Ingredients

    • 1/2 cup of milk
    • 1/2 cup water
    • 1 stick of unsalted butter (100grams)
    • 1 cup of flour
    • 4 large eggs
    • pinch of salt (optional)

How to make Eclairs:

  • Preheat oven to 350F.
  • In a medium size pot put in 1 stick of unsalted butter and turn heat on medium/low until butter is melted.
  • Add in 1/2 cup of water and 1/2 cup of milk stir for a minute.
  • Add a pinch of salt (optional)
  • Turn off heat and add a cup of flour, stirring quickly.

  • Add in the eggs one by one, quickly stirring after each egg. (You can also use a hand mixer for this step.)
  • Your dough will start becoming kind of sticky. Put dough in a pastry bag.
  • Spray two cookie sheets with Pam, or use parchment paper. Squeeze round or oval shapes of the dough on the cookie sheets leaving room between each eclair to puff up in the oven.

  • Put in oven, check on them few times. As soon as they puff up and get a brownish bottom take them out (about 20-25mins, depending on oven). Let them cool down.
  • Meanwhile, make the cream:

    • 12oz of whipped cream
    • 8oz of cream cheese softened
  • 3/4 cup of powdered sugar

  • Beat softened cream cheese until smooth and no clumps.
  • Add in 3/4 cup of powdered sugar, beat until well incorporated.
  • Add in whipped cream and beat for a minute. (The cream should not be runny.)
  • In a pastry bag put in the cream and make a tiny cut on the tip.
  • Fill in the eclairs
  • For the Chocolate Glaze: 
  • Melt 3 Tablespoons of unsalted butter in the microwave, take out and stir in 1/2 cup of chocolate chips. Brush each eclair with chocolate or just dip the tops.

You are done! Keep them in refrigerator when not eating.

  • Transfer the cream to a pastry bag with a tip and fill the eclairs.

For the chocolate glaze

  • Melt 3 Tbsp unsalted butter in the microwave then quickly stir in ½ cup chocolate chips.
  • Brush each eclair with chocolate or just dip the tops in.
