Ingredients

    • 1 handful baby spinach

 

    • 1 cup grape tomatoes

 

    • 2 Persian cucumbers (or you can substitute them with half of a regular english cucumber)

 

    • 1/4 red onion

 

    • 1 avocado

 

    • Olive oil

 

    • Salt and pepper

  • Wash and dry your vegetables.
  • Put spinach in a large bowl; add sliced cucumbers, 1/4 of a red onion, tomatoes, and sliced avocado. Season with salt and pepper.

  • Add olive oil right before serving and mix carefully.  Your salad is ready!  Transfer into a salad plate and serve this delicious spinach salad!
