Simple Honey Cake with Cream

Ingredients

For the batter:

    • 1 cup of sugar
    • two eggs
    • 2 Tbsp honey
    • 2 cups of flour
    • 1.5 tsp of baking soda
    • 2 Tbsp butter

Directions for Honey Cake:

  • The dough is made on a steam bath.  Pour water in a pot, bring it to a boil, and place a non-melting bowl on top of the boiling water.  Then, place butter in the bowl and let it melt completely.  After that, add sugar, and honey. Finally, mix well until you have a smooth consistency.

  • In a separate bowl, lightly beat the eggs with soda and slowly add the mixture to the batter. Then, continue to mix the batter while adding the mixture.

  • Cook for about 15-20 minutes until the batter becomes fluffy and changes the color to light yellow.
  • Now, add flour to the batter and continue mixing for 5 more minutes.(your batter will be sticky). Then, take it off the steam bath, put on a floured surface, ad let it cool for 2 minutes. After that, add more flour and shape the batter into a ball.

  • Now, preheat your oven to 350F, and line your baking sheet with parchment paper. Divide the dough into 8 equal pieces.  Start rolling them out, one by one. Keep adding flour as needed, because the dough might still be sticky.
  • Bake each layer for 2-3 minutes, or until golden brown. Remove from the oven and cut out a circle by placing a plate over the top. This way, all your circles will be equal in size. Save the outside of circle pieces for decorating your cake.

  • For the cream, beat the butter on high speed until light and fluffy. Then, add cooked condensed milk and continue mixing on medium speed until well combined.  Personally, this is my favorite cream to use in honey cake. But, as I said earlier you can use any of your favorite creams.

  • Put the cake together by spreading a generous amount of cream on each layer and putting them on the top of each other.
  • For decoration, shred the leftover pieces in a blender and sprinkle over the top and on the sides of the cake.  Then, let the cake stand for a few hours before serving. Finally, serve with coffee or tea!

Notes

DULCE DE LECHE (HOMEMADE CARAMEL)
 
INGREDIENTS:
  • Water
  • Sweetened Condensed Milk
INSTRUCTIONS:
  1. Water is a must! The water needs to be over the cans at all times, if you see your water is below the cans while boiling, pour in more water.
  2. Boil on medium heat for exactly two hours. Set timer from the time you turned on the stove. Throughout the two hours, make sure the water is above the cans.
  3. After two hours, take cans out and leave them on the counter or in the fridge for them to cool down.
