Chicken meatball soup1


For the meatballs:

  • ½ pound ground chicken
  • ½ of a large onion, minced
  • 1 egg
  • 3 Tbsp flour or bread crumbs
  • Salt and pepper

For the soup:

  • 2 litters of water
  • 4 potatoes
  • 5 Tbsp of rice
  • 1 carrot grated
  • ½ of a large onion, diced
  • ¼ cup chopped dill or parsley
  • Oil for frying
  • Salt and pepper

  • Pour water in a large soup pot and bring it to a boil.  Add sliced or cubed potatoes and cook them for ten minutes.
  • Meanwhile, combine the ground chicken, half of the onion, minced, the egg, flour or bread crumbs, salt and pepper and mix well.  Form walnut sized meatballs, lay them on a cutting board and set aside.

  • Heat olive oil in a pan; add diced onions and grated carrot and sauté until the onions are soft, for about 8 minutes.

  • When the potatoes are half cooked through, add the fried onions and carrots, rice (don’t forget to rinse it through), bring the soup to a boil and carefully throw in the meatballs, one by one.  Now, add salt and pepper, close the lid and cook on medium high heat until meatballs rise to the top.
  • Remove from the heat, add chopped dill or parsley, and let the pot stand for about 10 minutes with the lid on.  This will help all the flavors to come together.
