My Sister In-law’s Quick and Easy Beef Chili Recipe

This beef chili recipe is full of flavor and is perfectly spiced. With an incredible texture, it’s a wonderfully hearty meal that will warm you up on those cold, winter nights.

I made this beef chili for my family the other night, and after second helpings and nonstop praising, I wondered why I didn’t make this more often. This chili was phenomenal. It was loaded with delicious flavors. It combined chunky beef with thick, smooth kidney beans. It was the perfect way to warm up on a chilly night, pun intended. It made me remember my love for chili. It’s going to be on the menu way more often now. Because why rob my family of this delicious bowl of hearty goodness? 

This is a true one-pot chili. Everything gets added into the same pot. No having to boil anything separately, or sear something in a different pan. Nope. One pan, and one pan only. 

Key Ingredients in this Beef Chili

Beef. Ground. Obviously. Not a fan of beef? You can follow the same recipe and make turkey chili.

Onion and garlic. I’m someone who thinks they belong in 90% of all dishes. But in this beef chili, they come together to make the perfect base.

Veggies. Though it’s called beef chili, the vegetables help give this recipe an earthy flavor. I’m using red bell peppers, carrots, and tomatoes.

Picante sauce. It adds just the right amount of spice.

Swapping Add-ins

I think recipes that have wiggle-room with ingredients are the best kind of recipes. This beef chili is amazing as is. And I’ve finally perfected it and presented it to you in what I think is the best version ever. But you can totally swap the ingredients to fit your taste or use what you have at home.

Instead of kidney beans, you could use pinto beans. Or even chickpeas.

Don’t like red bell peppers? Yellow would be great too!

Ingredients

  • 2 Tbsp olive oil
  • 1 lb ground beef
  • 1 small onion
  • 2 cloves garlic
  • 1 red bell pepper
  • 2 medium carrots
  • 2-3 small tomatoes
  • 2 tsp ground cumin
  • 1 tsp dried oregano
  • 2 cans red kidney beans
  • 1 cup of The Original Picante Sauce (add 2 cups of the sauce if you want your soup spicier) 
  • Salt and pepper, to taste
  • 1 cup of water

Directions for Beef Chili: 

  • In a large cast-iron pot heat olive oil over medium heat.
  • Add the onion, red bell pepper, and carrots, then put the lid on and cook until the vegetables are tender, stirring occasionally.  Then add the ground cumin and garlic, cook for one more minute.

  • Raise the heat to medium-high and add the ground beef.  Cook until the meat is no longer pink, stirring occasionally and breaking up the beef with a spoon.

  • Add the diced tomatoes, Picante Sauce, water, dried oregano, salt, and pepper and stir until the ingredients are mixed well.  Partially cover the pot and cook on low for 20 minutes, stirring every ten minutes.

  • Stir in the beans and cook for 15 more minutes. Salt and pepper to taste.
