- 2 tomatoes, sliced (or 7 cherry tomatoes)
- 1/3 cup grated mozzarella cheese
- 1/2 Tbsp mayonnaise
- juice from 1/2 lemon
- salmon seasoning or seafood seasoning
Directions For Salmon with Tomatoes:
On an oven-safe sheet place parchment paper (or foil) (should be a bit more than your salmon size so you could close it to cook.)
Place salmon on paper then sprinkle 1/4 teaspoon salt and pepper, 1/4 teaspoon salmon seasoning, and juice half a lemon (without seeds.)
Brush salmon with mayonnaise.
Spread sliced tomatoes on salmon.
Then sprinkle with grated cheese.
- Close the salmon with foil (or parchment paper) and place in the oven for 20-25 minutes, if you like, you could open the foil for the last3-5 minutes so the cheese gets more color.
