Salmon with Tomatoes

Ingredients

    • Salmon

 

    • salt and pepper

 

    • 2 tomatoes sliced

 

    • 1/3 cup grated cheese

 

    • 1/2 tablespoon mayonnaise

 

    • 1/2 lemon

 

  • Salmon seasoning

Directions: 

  • On an oven safe sheet place foil (should be bit more than your salmon size so you could close it to cook.)
  • Place salmon on foil. Sprinkle 1/4 teaspoon salt and pepper, 1/4 teaspoon salmon seasoning, and squeeze out half a lemon (without seeds.)
  • Brush salmon with mayonnaise.
  • Spread sliced tomatoes on salmon and sprinkle with grated cheese.

  • Close the salmon with foil and place in oven for 20-25 minutes, if you like, you could open the foil for the last3-5 minutes so cheese gets more color.

  • Cut salmon into pieces and serve. I like to serve this salmon with tomatoes recipe with orzo and spinach, but you could add any side you like with salmon.
