Easy Eggplant Appetizer with Tomato

Ingredients

    • 1 eggplant
    • 6-8 tomatoes
    • 1 handful dill or parsley
  •  
    • 1/2 cup grated parmesan cheese
    • 4 Tbsp of mayonnaise
    • black pepper
    • 2 garlic cloves
    • 2-3 Tbsp olive oil
    • Salt

Directions for this Eggplant Appetizer: 

  • In a small bowl combine 1/2 cup grated parmesan cheese, 4 Tablespoons of mayonnaise, a pinch of black pepper, and 2 cloves minced garlic.

  • Slice eggplant into thin slices.
  • Next, slice the tomatoes into thin slices.

  • Chop the dill.

  • Drizzle sliced eggplant with 3 Tablespoons of olive oil and a pinch of salt, then mix together.

  • On a griddle or a heated pan, spread out the eggplant slices.
  • Grill until both sides are browned up beautifully.

Bring it all together: 

  • On each eggplant slice  put a slice of tomato. Over the tomato, put a teaspoon of parmesan mix and top it off with a sprinkle of chopped dill or parsley.
