Quick Carrot Salad with Garlic and Spices

Here’s a wonderful new way to enjoy carrots! These bright orange veggies are shredded and seasoned to perfection!

Usually, when I see heaps of beautiful, brightly colored carrots, my mind thinks of all the ways I’d enjoy carrot cake. You know, on the kitchen table, on the couch, in my bath for some much needed TLC. I digress. But carrot cake is one of my favorite things to make when I’ve got lots of carrots laying around. Here’s the thing though – how much carrot cake can you really eat? Am I right? Well, the answer for me is quite a lot, apparently, but that’s beside the point. 

My point is, you can’t always make carrot cake every time you’ve got some extra carrots at home. 

And to be honest, my kids are getting tired of carrots showing up in every dish I make lately. I think these carrots are multiplying in my refrigerator as we speak!

I had to do something y’all! I had to bring out my carrot salad recipe. I used all 2 pounds of the carrots that I had. And I’m so glad I did, because this salad was gobbled up quick. Salad, shredded carrot recipe, whatever you want to call it. It’s good!

So, what exactly is this spiced carrot salad?

It’s a dish of shredded carrots that are combined with vinegar, sugar, black pepper, coriander, and salt.

Minced garlic is added, generously

Hot grape seed oil is poured over the mountain of minced garlic that sits at the center of the shredded carrots.

Smoky goodness roams throughout your house.

The shredded carrots are devoured for days.

Healthy, easy to make, and so good! Definitely worth a try! And definitely, a great way to get rid of those never-ending carrots!

What do I need to make this recipe?

  • 5 Tbsp vinegar
  • 1 tsp salt
  • 1 tsp pepper
  • 3 Tbsp sugar
  • 1 tsp coriander
  • 1/2 cup grapeseed oil
  • 2 lb carrots
  • 10 garlic cloves, minced

Directions for this Carrot Salad:

  • To the carrots add 5 Tablespoons of vinegar, 3 Tablespoons sugar, 1 teaspoon of black pepper, 1 teaspoon of coriander, and 1 teaspoon of salt. Combine.  
  • Add 10 garlic cloves, minced to the center of the carrots.
  • Heat 1/2 cup of grapeseed oil on high heat in a small pot until steam comes out.
  • Pour the oil straight onto the garlic, then mix well with the carrots right away. Try not to burn yourself. This step will give the carrots a smoky garlic smell.

Ingredients
  

  • 5 Tbsp vinegar
  • 3 Tbsp sugar

  • ½ cup grapeseed oil
  • 2 lb carrots peeled, grated
  • 10 garlic cloves minced

  • Peel and grate 8-10 carrots (about 2 pounds) carrots. Transfer to a large bowl.
