Simple Stuffed Chicken

Ingredients

    • 3 chicken breasts boneless and skinless
    • salt
    • black pepper
    • 2 Tbsp unsalted butter
    • 2 large eggs
    • 1 1/2 cups unbleached white flour
    • 1 1/2 cups bread crumbs
    • 5 Tbsp olive oil (depending on your pan)

Stuffed chicken

Directions: 

  • In a small bowl or a shallow plate whisk 2 large eggs.
  • In a different small bowl or shallow plate put 1 1/2 cups of bread crumbs.
  • In a third separate small bowl add 1 1/2 cups of flour.
  • Take 3 boneless and skinless chicken breasts and slice them in half horizontal.

  • Use a piece of plastic wrap and place on top of chicken and pound each chicken breast piece with a meat pounder.  Don’t need to go all out and use all your straight, just pound each piece so it becomes thinner.
  • On each piece of chicken breast sprinkle a few pinches of salt and few pinches of pepper. (don’t be too soft on this part).
  • Cut 2 Tablespoons of unsalted butter into small pieces and place them in the middle of each chicken piece.

  • Roll chicken breast so the sides stay in, and the butter doesn’t show or get out. Use toothpicks to hole it all together. Roll each piece.

  • Take each roll and roll it carefully in flour bowl.

  • After flour, dip in whisk eggs.

  • Then, roll it in bread crumbs.

  • Heat 5 Tablespoons olive oil in a skillet on medium/low heat.
  • Fry each rolled chicken breast, the outside of the chicken will become browned and crispy. It took me about 5 minutes each side. It’s chicken you know, it cooks fast 🙂 Take out toothpicks, it will be hot, but using a fork or tongs can help, easier to take them out will hot.

  • Keep in a covered dish. Better to serve right away, but can be reheated later too.

  • Once it has been pounded, sprinkle on some salt and pepper to taste.
  • Cut 2 Tablespoons of unsalted butter into smaller pieces and place them in the middle of each chicken piece.

  • Roll chicken breast up with the butter. Stick toothpicks through the layers to hold the roll together.

  • Take each roll and roll it carefully in the separated flour bowl. Then dip into the wisked egg bowl and cover completely.
  • Lastly, roll the chicken in the bowl of bread crumbs.

  • Heat 5 Tablespoons of olive oil on low/medium heat in a skillet.
  • Fry each rolled chicken breast until the outside is brown and crispy. The temperature inside the chicken should measure 165°F.
  • Remove toothpicks. Transfer to a dish with a lid, then serve.

Notes

It’s best if the chicken is kept in a covered dish.  Better to serve it right away but it can be reheated later too.
