Beef Soup with Rice and Potatoes is hearty and comforting. A perfect gluten-free soup to fill up any time of the year.
What do I need to make this recipe?
- 1/2 lb beef, cubed
- 3 medium potatoes, sliced or cubed
- 1/2 onion, diced
- 3/4 cup dry rice
- 1 Tbsp olive oil
- 1/2 cup tomato sauce
- 8 cups water
- salt and pepper, to taste
How to Make Beef Soup with Rice and Potatoes:
Cut the beef chunk into small cubes. I like to cut it into tiny pieces, that way it cooks much faster.
- Place beef cubes into a soup pot, pour in 8 cups of cold water. Bring to a boil then reduce heat to low and cover the pot with a lid. Continue cooking until beef pieces become soft- about 40-60 minutes depending on meat size.
- Once the beef is soft and ready, add in the potatoes and rice. Bring to a boil and continue cooking over medium heat for 20 minutes or until potatoes are tender and rice is cooked through.
- While potatoes are cooking, heat olive oil in a frying pan and sauté onions until soft (7 minutes.)
- Once onions are soft, add the tomato sauce and cook for 2 more minutes, then turn off the heat.
- Add the tomato sauce with onions into the soup pot, then lastly season with salt and pepper to taste. Mix carefully until the sauce is blended.
- Bring all to a boil, then turn off the heat.
- Let stand for 10 minutes covered with a lid before serving.
- Garnish each plate with fresh parsley and serve with a slice of toasted bread. (optional)
