One Pot and Slow Cooked Braised Beef with Carrots

This braised beef recipe will take you to a whole new world. It is melt-in-your-mouth tender and incredibly flavorful. If you’re looking for the ultimate comfort dish, this is it.

I’m crazy about those slowly cooked recipes that remind me of my childhood. The kind that when you take your very first bite, you get taken back somewhere comfortable and cozy. For me, this braised beef recipe is just that. It is succulent, flavorful, and brings all the nostalgia. 

My favorite thing about this recipe is that it’s so easy to follow. Anyone can make this. Beginners, welcome!

What is braising?

What makes this beef so tender is the cooking process. It’s braised. 

Braising is essentially a two-step process.

First, you sear/brown the meat. When you cook meat in liquid (at a low temperature especially), you won’t really get it to naturally brown. Instead, you’ll have to sear it first to get a rich, dark finish on the beef. This also helps to render out the fat in the meat.

The second step is braising. You add liquid to the meat (along with any vegetables, spices, herbs etc) and let everything simmer on low heat with the lid on. After some time (which can range depending on the type and size of meat you’re using), you’ll have tender, juicy meat with a beautifully rich gravy. 

Although it can take some time to cook, this braised beef dish is pretty hands-off. It’s the perfect dish to get cozy with after a long day. It’s especially wonderful during those chilly nights!

What do I need to make this recipe?

  • 1 1/2 lb beef
  • 1 onion
  • 2 carrots (medium-sized)
  • 1 slice fresh sweet red pepper
  • salt and pepper, to taste
  • 2 Tbsp tomato paste
  • 3 Tbsp olive oil

How to make this yummy Braised Beef: 

  • Boil water in a kettle.
  • Cut beef into stew size pieces.
  • Chop 1 onion.
  • Cut carrots into squares or small stick slices.
  • In a cast-iron or pot, heat up 3 Tablespoons of olive oil.
  • Add to the pot the beef and sprinkle in a generous amount of salt and pepper; stir occasionally.

  • When the oil and water from beef are almost gone, add in the chopped onion.
  • Stir and sauté for 2 minutes.
  • Add to the pot the carrots and stir.
  • Stir in 2 Tablespoons of tomato paste, and add in 1 small slice of red pepper.
  • Take water you boiled in a kettle and pour into the pot, just enough to cover all the ingredients.

  • Salt and pepper to taste.
  • Put on lowest heat, cover with a lid, and let it simmer for 45-50 minutes.
