Peach Mousse Cake

One of my favorite cakes to make is this peach mousse cake. It makes a great presentation but also tastes amazing! Your guests will think you spent hours in the kitchen, but in reality, it’s so quick and easy to bake and put together. 

Peach Mousse Cake

Ingredients

  • 3 eggs
  • 1 cup of sugar
  • 1 tsp baking powder
  • 1/2 cup flour
  • 1 can of peaches in juice
  • 1- 3oz package of apricot or peach jello
  • 1- 16oz whipping cream
  • 1/4 cup of chocolate chips
  • 3 Tbsp of unsalted butter

You don’t necessarily have to use a peach or apricot flavored jello, but if you use a different flavor, the cake will no longer be the orange color and will taste a bit different, but still good.

To make the foundation of the peach mousse cake you will need to make a sponge cake: 

  • Preheat oven to 350F.
  • With a hand mixer, in a medium-size bowl beat together 3 eggs and 1 cup of sugar for 1 minute.
  • Add in 1 teaspoon of baking powder; beat for 1 more minute.
  • On lowest speed, add in 1/2 cup of flour.
  • Pour batter into a nonstick cake pan and transfer to the oven for 20-25 minutes.

  • Let it cool down.

Here are the steps for the tasty and creamy mousse:

  • Separate juice and peaches from the can.
  • In a microwave-safe bowl, mix 3 ounces of peach jello with the peach juice.

  • Place in the microwave for 3 minutes, mixing after each minute.
  • While beating the whipped cream, slowly pour the jello.

  • Continue beating until the whipped cream mixture starts to form stiff peaks.

Put together the mousse cake

  •  Combine together 1/2 cup of water and 1 teaspoon of sugar. Pour on top of sponge cake using a spoon, this will make the cake moist.

  • Spread mousse on top of the sponge cake. Put the cake in the refrigerator for 10- 15 minutes.

  • While the cake is in the fridge, make the chocolate glaze by melting 3 tablespoons of unsalted butter.
  • Mix in 1/4 cup of chocolate chips right away and melt.

  • Pour the chocolate glaze over the cake.

  • Finish off by decorating the cake with some peach slices if you wish to. All ready, slice the cake and enjoy!
