Easy Beet Salad for a Detox

Remember when I shared my Vegan Red Vegetable Salad recipe with you? It was chock full of nutritious goodness and was the color of summer reds. It’s a salad I make when I’m looking to cleanse my body out. 

Well, you’re in luck. Because today, I’ve got another great detox recipe for you. It has fewer ingredients than the one I previously shared here on my site but still gives you great benefits. 

Beets are the hero. In this easy-to-make salad, you don’t need other vegetables competing for the number one spot in this dish. Beets can hold their own. You just want three other ingredients that will help enhance the natural taste of beets:

  • Garlic
  • Mayonnaise
  • Walnuts

And salt for good measure. 

I’m not kidding you right now; those are the only ingredients you need for this recipe. It’s a wonderful way to flush out some toxins from your body, soothe your digestion, and reduce inflammation. You can use vegan mayo to make this recipe completely plant-based.

And aren’t we all looking for more and more plant-based recipes these days?

Beets provide us with lots of nutrients. We reap many benefits by eating them raw. But I do understand some people might not like the taste of raw beets. For those of you who don’t, this is a great recipe to try while still getting those important benefits. The taste of beets is a little more subtle, especially with the help of garlic and mayo.

What do I need to make this recipe?

  • 2 large beets
  • 3 garlic cloves
  • 1/4 cup mayonnaise
  • 1 cup walnuts, chopped
  • salt, to taste

 How to make Beet Salad: 

  • Wash the beets then boiling them for 40 minutes; or until you can easily pierce them with a fork.
  • If you prefer to bake it, wrap the beets in foil and bake at 380F for 1 hour, or until soft.

  • After beets have cooked and cooled, peel then grate into a medium-sized bowl.
  • Add chopped walnuts (instead of chopping, you may put walnuts into a food processor.)
  • Mince 3 garlic cloves and add to the bowl with beets and walnuts.
  • When ready to eat, mix all together with 1/4  cup mayonnaise and some salt to your taste.
  • It’s now ready to enjoy!
