This Mushroom Alfredo dish has got “comfort food” written all over it. It’s saucy, cozy, and totally worth the carbs.
I’ve had the most relaxing weekend and to be completely honest, I was a little disappointed when it came to an end. I wanted to keep that cozy feeling going at the start of the week. So I had an aha moment. Make a cozy meal.
I have a few favorite cozy dishes actually. Like this incredible beef chili, or my favorite one-pot beef stew. But on this particular day, I was craving something with a bit more carbs. Something I could slouch on the sofa with. It had to be mushroom alfredo. And I was so excited to make it for two reasons.
One, because I couldn’t wait to chow down on it, obviously. And two, because it’s actually so easy to make. And relaxing. I’m not sure exactly what it is about this recipe, but it’s one of those that reminds you that cooking is actually fun, and soothing.
Perhaps it’s making the roux; whisking your butter with your flour, and slowly incorporating your cream. Maybe it’s combining the sauce and the mushrooms and the pasta altogether at the end. Or, it’s all of those things. This recipe is just as fun to make as it is to eat.
What do I need to make this recipe?
- 1 stick unsalted butter (8 Tbsp)
- 16oz whipping cream (or milk)
- 2oz cream cheese
- 3/4 cup parmesan cheese
- 1/2 tsp pepper
- 1/4 tsp salt
- 1 tsp garlic powder
- 16oz mushrooms, sliced
- 1 package pasta of your choice
Directions for the pasta:
- Boil pasta according to the instructions on the box.
For the Mushroom Alfredo Sauce:
- In a saucepan add 1 stick of unsalted butter, 16 ounces of heavy whipping cream, and 2 ounces of cream cheese.
- Sauté until the butter melts completely.
- Add in 3/4 cup grated parmesan cheese, 1/2 teaspoon of black pepper, 1/4 teaspoon of salt, and 1 teaspoon of garlic powder.
- Simmer all for 15 minutes.
- Meanwhile, on a skillet, sauté sliced mushrooms. Add about 1 teaspoon of salt. Mix occasionally, until mushrooms brown up.
- Add mushrooms to the rest of the ingredients in the simmering pot. Turn heat off.
- Combine with the pasta and enjoy!
This is a definite hit in our home. Everyone almost always goes for seconds. And those that might not be too crazy about mushrooms, absolutely don’t mind them in this dish. So if you’re looking for a comfort meal to get cozy with, you have to make this mushroom alfredo. It is absolutely worth it.
