This recipe takes cucumbers to the next level. By adding a few ingredients and letting the cucumbers marinate in them, you get a wonderful dish that makes the perfect starter, side, or snack.
All you need is 8 simple ingredients to make these marinated cucumbers. And I bet you’ve already got a majority of them at home.
So what do you marinate your cucumbers in?
Salt and pepper. Of course. Have you ever dipped cucumbers in just salt and pepper? Yummy!
EVOO. It adds the perfect taste.
White vinegar. Don’t worry. This won’t be overbearing. It adds just the right amount of acidity.
Sugar. It balances everything out quite nicely.
Garlic. For an earthy taste. And honestly, adding garlic almost always makes everything better.
Dill. For freshness.
Toss these ingredients around with your sliced cucumbers and let it all sit for about 20 minutes.
Voila! You’ve got easy, delicious, and quickly marinated cucumbers that everyone will enjoy.
What do I need to make this recipe?
- 2 lb small-sized cucumbers
- 1/2 Tbsp salt + 1/2 tsp (or to taste)
- 1/4 tsp black pepper
- 1/2 Tbsp extra virgin olive oil
- 1/2 Tbsp white vinegar
- 1/2 tsp sugar
- 2 cloves garlic
- 1 handful of fresh dill (optional)
How to make Quick Marinated Cucumbers:
- Wash cucumbers, and snip off the ends of each.
- Slice each cucumber into fours horizontally.
- Place sliced cucumbers into a large bowl.
- Add to the sliced cucumbers:
- 1/2 Tablespoons of salt
- 1/4 teaspoon of black pepper
- 1/2 Tablespoons of oil
- 1/2 Tablespoons of white vinegar
- 1/2 teaspoon of sugar
- 2 cloves of garlic, minced
- 1 small handful of fresh dill (optional)
- Add another 1/2 teaspoon of salt or to your taste.

- ½ Tbsp salt + 1/2 tsp, or to taste
- ¼ tsp black pepper
- ½ Tbsp extra virgin olive oil
- ½ Tbsp white vinegar
- ½ tsp sugar
- 2 cloves garlic minced
- 1 handful fresh dill chopped, optional
Instructions
- Wash cucumbers, and snip off the ends of each one.
