Banana Bread with Walnuts

We don’t appreciate the goodness of ripe bananas until they come together to make banana bread. And how delicious do they become? So delicious.

Combined with walnuts and buttery goodness, these ripe bananas turn into the most sublime banana bread. Moist. Nutty. And so versatile. Banana bread has my heart forever.

My favorite thing about this recipe is that it uses ingredients that are almost always available in my pantry. Eggs. Flour. Butter. Milk. Baking powder and soda. Sugar. Walnuts. No last-minute grocery runs here.

But the hero here is the humble banana.

Overripe bananas are unsightly but as they ripen, they become sweeter. It truly is the perfect addition to many baked goods. And what a wonderful way to not waste them: turn them into this cozy bread. 

Ingredients

  • 1 3/4 cup flour
  • 2/3 cup sugar
  • 2 tsp baking powder
  • 1/4 tsp salt (I used sea salt)
  • 1/2 tsp baking soda
  • 2 large eggs
  • 1/3 cup unsalted butter (softened)
  • 2 Tbsp milk (I use 2 %, any would work)
  • 1/4 cup chopped walnuts
  • 2-3 bananas

Directions: 

  • Preheat your oven to 350F.
  • Butter up your bread pan.
  • Mash the bananas with a fork.
  • In a medium-sized bowl, beat all of the ingredients together for 2 minutes.

  • Transfer the batter into the bread form and put in the oven for 1 hour. (Or until it passes the toothpick test.)
  • You will smell the wonderful aroma coming from your oven. Bananas and walnuts make a wonderful combination in this super easy bread!

Versatility

There are so many things you can add (or omit) from banana bread! Personally, I love the addition of chopped walnuts but I know that’s not everyone’s cup of tea. Especially when we’re dealing with nut allergies. You can replace them with chocolate chips. Or raisins. And if allergies aren’t a concern, dare I say, add them all in there

Looking for a different kind of nut to add in there? You could reach for pecans or hazelnuts. You could even make a Hawaiian banana bread that combines ripe bananas with coconut and pineapple. Yum.

I also found it was really versatile – I had a little bit leftover that went a little stale so I made it into pain perdu (a bit like french toast but with caramel crunch on the outside).
