The perfect addition to your summer dessert table, this healthy watermelon pizza is sure to impress your guests, big or little. Fresh summer fruits paired with rich, tangy, crumbly feta cheese – what’s not to like?
I’m someone who always has a lot of fruit on hand. And I’m always looking to find new ways to serve them. They’re normally pulsed, squeezed, chopped, pureed, or simmered into my desserts. But today, I present to you a dessert that features unadulterated fruit. A minimal (read: zero) effort dish that will get your kids to chow down some fruits and ask for more.
I’m talking about watermelon pizza.
Specifically, one made from delicious summer fruits.
First, we begin with our base – sweet, juicy watermelon. You’ll want to cut a whole slice first so the rind is on the outside of the circle and the meat of the watermelon is visible from the top and bottom. Next, grab the fruits for topping. You can choose whichever fruits you like, but I’ll share with you my personal favorite combination:
Deliciously juicy summer berries. I’ve got blackberries, blueberries, raspberries, and strawberries. Slice the strawberries but leave everything else whole. It makes for a beautiful presentation.
Peaches. If it’s summer, I’ve got peaches in my house. They’re the perfect balance of slightly tangy and sweet.
Kiwis. Simply because kiwis are absolutely delicious. Kiwis also have a great texture that really adds to the entire experience of this fruit pizza.
Now that you’ve added the fruits onto your watermelon base, it’s time to grab the feta cheese. Because what’s pizza without cheese, am I right? Sprinkle your crumbled feta cheese all over your “pizza.” Cut into slices and enjoy.
Wasn’t that ridiculously easy? So easy, it’s almost laughable. But it’s so delicious because you bite into a beautiful fruit salad sans the fork and bowl.
This fruit pizza is easy, healthy, and so good! It looks pretty too! And if you want to make this more into a proper dessert, feel free to add fresh whipped cream as your pizza sauce! Bon appetit!
