How to make an Upside Down Peach Cake

This is the BEST homemade peach upside down cake. It’s made from a moist vanilla cake base that’s baked on top of sweet, juicy peaches. This is an easy-to-follow recipe, even for those that are new to baking!

There’s a lot of things I love about the South. Especially southern food. Especially, especially peaches. Have you ever had a fresh Georgia peach? Oh my goodness are they amazing. 

Once summer hits, I think about all the recipes I’ll be making with peaches (My peach mousse cake is definitely on the list every summer).  And then I bring my haul home. I seriously purchase peaches in bulk. My fridge is always filled with peaches in the summer. You think I’m exaggerating. Oh but I’m not

One summer, I decided to make a peach upside-down cake. We love a great pineapple upside-down cake in this house, and I wanted to switch things up. And you know what? I never looked back. This peach upside-down cake is the real deal. It’s flavorful, fluffy, moist, and full of juicy peach flavor.

What Is An Upside Down Cake Anyway?

An upside-down cake is simply a cake that is baked with the “toppings” on the bottom of the pan and the cake batter on top. It is prepared and baked and then flipped over before serving. So those toppings that disappeared under the batter are beautifully sitting on top now. 

How To Flip An Upside Down Cake

I get that people are intimidated to flip an upside-down cake. 

What if the ingredients get stuck to the bottom of the pan?

What if the cake falls apart?

What if it’s a total mess?

Breathe.

Here’s how you flip it.

  • Allow the cake to cool for about 10-15 minutes. 
  • Put a plate over your cake pan and, using both hands, flip. Now the plate should be on the bottom and the cake pan on top (but upside down)
  • Carefully lift up the cake pan and your cake should slip right out!

What do I need to make this recipe?

  • 5 large eggs
  • 1 cup of sugar
  • 3 drops of vanilla extract
  • 1/2 tsp of baking powder
  • 1 cup of unbleached flour
  • 3 fresh peaches
  • 1/4 cup of powdered sugar
  • Pam or butter for cake not to stick to pan

How to make Upside-Down Peach Cake:

  • Preheat oven to 350F.
  • Butter up a 9″ cake pan.
  • Slice 3 peaches, removing the pit.  Spread the slices on the bottom of the buttered cake pan.

  • Beat together 5 large eggs and 1 cup of sugar on full speed, until well blended.
  • Add to the eggs 3 drops of vanilla extract and continue beating for another minute.
  • Bring speed to a low and add in 1/2 teaspoon of baking powder and 1 cup of unbleached flour. Let it all incorporate together for about a minute-no more.

  • Spread the batter on top of the sliced peaches in the cake pan.
  • Bake for 25-30minutes, or until you can gently stick a toothpick in and it comes out clean.
  • Turn the cake upside down to a plate and take the cake form off.
  • After cake cools down, sift 1/4 cup of powdered sugar on top of the cake.
  • Enjoy!
