Appetizers can be a little tricky. Our minds almost always skip all the aisles and go straight to the fried section. Think chicken nuggets, mozzarella sticks, jalapeno poppers, etc. Don’t get me wrong.

Those are all delicious but sometimes you need a refreshing, light appetizer. Where grabbing seconds or thirds isn’t so dangerous. Where you’re still looking forward to the entree because greasy, fatty appetizers didn’t give you a crash.

Que this tomato and cheese appetizer.

It’s so easy to prepare, and even easier to devour. Made in minutes, gone in seconds kinda deal. And they taste great in the summer. Those fresh, meaty tomato slices. The hint of garlic. That creamy cheese spread with freshly chopped dill. Or parsley. Chef’s choice.

Ingredients

  • 2-3 tomatoes
  • 1 handful of fresh dill or parsley
  • 1 garlic clove
  • 3 Tbsp mayonnaise
  • 1 cup shredded cheese (any kind you prefer)
  • 1 pinch salt
  • 1 pinch ground black pepper

It’s all in the spread

The cheesy spread is the hero here. Because the garden-fresh tomatoes will hold their own. It’s the mixture that brings this dish to life. I promise you, it’s ridiculously easy.

Just combine your ingredients. That’s literally all there is to it. No waiting around to refrigerate. No baking. No taking out any heavy-duty appliances. Put your spoon to work and that’s it!

Even though this appetizer requires minimal work, it packs a punch of flavor. These tomato and cheese slices also look pretty displayed. So it’s perfect for when you have guests over.

I can’t wait for you to try out this appetizer. Let me know how you liked it!
