Montreal Baked Chicken

Ingredients

    • 2 pounds chicken

 

    • 1 Tablespoon Montreal chicken spice

 

    • 1 1/2 Tablespoon sea salt

 

    • 1 Tablespoon extra virgin olive oil

 

    • 1 Tablespoon ground black pepper

 

    • 2 Tablespoons mayonnaise

 

  • 1 Tablespoon tomato paste

Directions: 

  • First mix together the marinate ingredients. Combine 1 Tablespoon of tomato paste, 2 Tablespoons of mayonnaise, 1 Tablespoon of ground black pepper, 1 Tablespoon of extra virgin olive oil, 1 1/2 Tablespoon of sea salt and 1 Tablespoon of Montreal chicken spice.

  • Mix the marinate with the chicken very well. Let it stand for at least 30 minutes.

  • Bake at 350F covered with foil, for 40 minutes. Broil or just uncover for another 5-10 minutes.
  • I like to serve this chicken with some couscous or mashed potatoes and a side salad.
