Baked Zucchini Appetizer

Ingredients

    • 1 zucchini

 

    • 3-4 tomatoes

 

    • 1 garlic clove

 

    • 1 cup cheese, shredded

 

    • 2 Tablespoons mayonnaise

 

  • 1 pinch salt

Directions: 

  • Slice zucchini into slices, add to a bowl and mix with a pinch of salt.
  • In a small bowl mix together, 2 Tablespoons of mayonnaise and 1 minced garlic clove.

  • Preheat oven to 350F.
  • Slice 3-4 washed tomatoes.
  • I use a ceramic baking sheet so I don’t need to spray or put anything from sticking while baking. If you are using a regular baking sheet, you may place a sheet of parchment paper.
  • On a flat baking sheet spread out zucchini slices. Spread mayonnaise mixed with garlic on each zucchini slice.
  • On top of the zucchini add a slice of tomato, and sprinkle each with shredded cheese.

  • Bake for 10-12 minutes or until the cheese starts to brown up.
  • Enjoy!
