You only need 5 ingredients to make this recipe, which is pretty easy to find. Zucchini is easier to find during summer months but also are imported from other places during other months. Roma tomatoes work best for these zucchini bites. Garlic is always in season and gives this recipe a great taste without overpowering. The cheese I use is cheddar cheese, but I have also made these bite with mozzarella cheese, choose your favorite cheese. Also, the cheese can be substituted for a dairy-free cheese option and will still taste great.
What do I need to make this recipe?
- 1 zucchini
- 3-4 tomatoes
- 1 garlic clove
- 1 cup cheese, shredded
- 2 Tbsp mayonnaise
How to Make Zucchini and Tomato Appetizer Bites:
- Slice zucchini into slices, add to a bowl and mix with a pinch of salt. Also, slice 3-4 washed tomatoes.
- In a small bowl mix together, 2 Tablespoons of mayonnaise and 1 minced garlic clove.
Preheat oven to 350F.
- On a flat baking sheet spread out zucchini slices (spray with butter/oil if needed or use a parchment paper).
- Spread out sliced zucchini.
- Spread mayonnaise on each zucchini slice.
- On top of the zucchini add a slice of tomato.
- Then sprinkle shredded cheese on top of each tomato.
- Bake for 10-12 minutes.
- Broil the last minute.
