Baked Zucchini and Tomato Appetizer Bites

These zucchini and Tomato Appetizer bites are great for parties or just an addition to a meal. They reheat well, so you can make them ahead of time. Just pop ’em back in the oven at 350 degrees for 3-4 minutes to reheat and re-crisp the edges.

Ingredients you will need to Make Zucchini Bites

You only need 5 ingredients to make this recipe, which is pretty easy to find. Zucchini is easier to find during summer months but also are imported from other places during other months. Roma tomatoes work best for these zucchini bites. Garlic is always in season and gives this recipe a great taste without overpowering. The cheese I use is cheddar cheese, but I have also made these bite with mozzarella cheese, choose your favorite cheese. Also, the cheese can be substituted for a dairy-free cheese option and will still taste great.

Ingredients

Notes

I use a ceramic baking sheet so I don’t need to spray or put anything from sticking while baking. If you are using a regular baking sheet, you may place a sheet of parchment paper.
