Quick Chicken and Noodles Dish with Easy Veggies

An easy and delicious recipe to bring comfort to your table. Grab your forks and dig in because this chicken noodle dish is the perfect big-bowl meal.

I don’t know about you but I definitely need a comfort meal, like, multiple times a meal. Something that I can either plop on the sofa and chow down on or gather around the table and share with my family while we share stories of our day. All while grubbing on some delicious, comfort food that takes us back. 

And this chicken noodle dish fits the bill just right. Whether it’s what I’m having for lunch or serving as dinner’s main course, it hits perfectly every single time. 

The sauteed onions and carrots, the boiled-then-browned-in-the-pan chicken wings, and the pasta of your choice come together for a simple dish the whole family can enjoy. Seriously, do you know any kids who say no to pasta? With chicken? Exactly. 

I like to keep it simple with the seasoning, just salt and pepper for me. This way, I get to taste all the ingredients separately, as well as all together in one bite. But feel free to add more spices to accommodate to your liking. Add a dash of chili powder or paprika for some mild heat. Or add in some garlic for an earthy taste. A splash of lemon works great here too. 

You really need to try this dish. Just four ingredients, plus butter. And done within minutes. Make a big batch to enjoy for lunch the next day too!

Ingredients

  • 1 lb chicken wings
  • 2 carrots
  • 1 onion
  • 1 lb package homemade noodles
  • Salt
  • Pepper
  • 2 Tbsp unsalted butter
  • Water

How to Make a Chicken Noodle Dish: 

  • Boil chicken wings in a pot filled with water. Add a few pinches of salt. Boil for about 20 minutes.
  • Take out the chicken from the pot and put the noodles into the water where you boiled the chicken. Boil for 8-10 minutes, until noodles are ready. (Read the package for detailed information on how to boil noodles)

  • Chop the onion and grate the 2 carrots.
  • In a pan, melt 2 Tablespoons of unsalted butter. Sauté chopped onions for 1 minute, then add grated carrots and boiled chicken wings with 2 teaspoons of salt and 1 teaspoon of pepper (more or less on salt and pepper to your liking).

  • Sauté until it starts to get the nice brownish color on the chicken.

  • Drain the noodles and add to the chicken with vegetables.
  • That’s it! Ready to enjoy!
