One-Pot Chicken, Bean, and Kale Soup

After a long vacation, a holiday party, illness, or the weather changing, a quick chicken-kale soup with beans is a good idea. It’s easy to prepare, all in one soup pot, it’s a healthy, light meal, and it’s definitely comfort food. This kale soup is made with pantry-staple ingredients that require minimal prep time.

What Ingredients You Will Need to Prepare for this One-Pot Chicken Kale Soup?

Butter: Unsalted. 

Chicken sausage: Dark meat from thighs or legs works best, but not meat from chicken breast. You could also use ground lamb, beef, or even Italian sausage meat. 

Tomatoes: Diced and preferably organic.

Chicken broth: Low sodium option. The vegetable broth will work too. 

Kale: Fresh. An excellent source of vitamin C. 

Navy beans: These are known for their high fiber and metabolic syndrome. You can choose to use other beans, too.

Salt and black pepper: for flavor.

  • 4 cups organic chicken broth – low sodium

What I like about Chicken Kale Soup Recipe

I like recipes that are easy to prepare, even if the ingredients are new to me. This soup is made all in one pot, which means easy cleanup. It’s gluten-free, low in calories, but highly nutritious, especially in fiber. Fiber helps the digestive system and gives energy to the body. Soups are one of my favorite kinds of meals in warm or cold weather. Unlike baking where the ingredients should be measured out, soups are simple, and it’s hard to mess up making soup. Also, this bean and kale soup recipe can be adjusted to your own taste. You can substitute the beans and chicken to your liking.

How to make Quick and Easy Chicken and Bean Kale Soup

  1. In a medium-sized pot melt butter, add in chicken sausage meat, and break apart the meat while sautéing, cooking until it is no longer raw.

2. Add in chicken broth and bring to a boil.

3. Add in a can of organic diced tomatoes.

4. Stir in the chopped kale and cook for another couple of minutes.

5. Drain and rinse a can of organic navy beans and add to the pot.

6. Salt and pepper to taste. Bring the pot to a boil, turn the heat off, and enjoy!

  • 1 Tbsp unsalted butter
