Honey Pecan Cake Roll

Soft, crunchy, and sweet, this Honey Pecan Roll will get a smile from everyone. It’s made with a simple cake batter combined with pieces of pecans and cream from just two ingredients, then topped with more pecan nuts and drizzled with a chocolate ganache. It’s a guest-pleasing dessert, that will only seem as if you spent all day baking…but you know the truth 😉

You will first need to cook (or buy) Dulce de Leche for the cream. Dulce de Leche is boiled Sweet Condensed milk.

Ingredients

  • 4 large eggs
  • 3/4 cup cane sugar
  • 1 Tbsp honey
  • 1/2 tsp baking soda
  • 1 tsp lemon juice
  • 3/4 cup all-purpose flour
  • 1 cup pecans (unchopped)
  • 1 cup unsalted butter (2 sticks), Softened
  • 1 can of cooked condensed milk Dulce de Letche  

To Make a Honey Pecan Roll at Home

  • Add in honey – you would want to use the honey that you like the taste of. 
  • In a small cup, combine 1/2 teaspoon of baking soda and 1 teaspoon of lemon juice together. Once it foams up, add to the mix.
  • Turn the speed down to the lowest and sift in ¾ cup of flour.
  • Chop pecans, then using a spatula, mix in the pecans into the flour mix.

  • Spread the batter onto the prepared baking sheet.

  • Bake at 350F for 20 minutes or until a toothpick comes out clean. (Time may vary depending on your oven.)
  • Roll into a clean towel and let it cool down. Unroll it and remove the parchment paper.

How To Make Cream with Just Two Ingredients

  • Using a hand mixer, beat unsalted butter in a large bowl until smooth. 
  • Add in one can of dulce de leche to the bowl and combine.

Putting the Cake Roll Together

  • Unroll the cake and spread the cream over it in an even layer.

  • Roll the cake back into a roll.
  • Cover the roll with the remaining cream.
  • Decorate with ganache and chopped pecans. Enjoy!

Can I Use Other Kinds of Nuts? 

Yes, you can use another kind of nuts. It will change the flavor of the roll a little bit. The type of nuts I would suggest to substitute would be Walnuts or Almonds.

  • Turn speed to the lowest, sift in 3/4 cup of flour.

Cream:

  • Beat 1 cup of softened unsalted butter, until smooth.

  • Unroll the roll and spread the cream all over evenly.

  • Cover the roll with remaining cream and decorate. I decorated it with ganache and chopped pecans.
