Meringue Jam Filled Tartlets

Making individual meringue jam-filled tartlets is a wonderful addition to your dessert table. The tarts are baked using pantry staple ingredients, then filled with your favorite jam and topped with baked fluffy meringue.

Ingredients

Basket: 

  • 3 egg yolks from large eggs
  • 1 large egg
  • 1 cup of sugar
  • 1 cup unsalted melted butter (2 sticks)
  • 1/2 tsp baking powder
  • 3 cups unbleached flour

Filling: 

  • fruit jam (any you like)
  • 5 egg whites
  • 2 cups of sugar

How to make Jam Filled Tartlets: 

Began by making the tartlets: Combine egg yolks, and one whole egg, sugar, unsalted butter, baking powder, and unbleached flour.

  • In a medium-size bowl, whisk egg yolks, 1 large egg, and sugar.
  • Add 1 cup of melted unsalted butter and 1/2 teaspoon of baking powder.

  • To the bowl, add a cup of melted unsalted butter and baking powder.

  • Stir in the flour. Leave in the refrigerator for 30 minutes. It will be easier to form the tarts if the dough is cooled.

  • While the oven is preheating to 350F, mold the dough into each form.

  • Bake for 20 minutes. Flip the molds over with a towel (don’t burn), and they will come out smoothly.

  • Place each tart shell back on a baking sheet and fill each one with 1/2 teaspoon of jam of your choice.

  • In an electric stand mixer, whisk the egg whites with sugar until peaks form and if you flip it over, it’s not runny.

  • Bake in the oven at 350F for 5 minutes, just until the tips of meringue begin to brown up.
