Garbanzo Beans with Rice, Chicken, and Meatballs Soup

Soup is the ultimate comfort food, and if you are like me, you feel that any time of the year is a good time for soup. Garbanzo Beans with Chicken Meatball soup is a filling soup that is packed with protein. This soup is made with ground chicken, potatoes, and garbanzo beans.

Garbanzo Bean with Rice Chicken Meatball Soup Ingredients: 

To make this soup recipe, you will need the following ingredients (see the full recipe below for detailed amounts and instructions):

Chicken thighs: You will need to ground the chicken, but you can also just buy ready-made dark ground chicken. 

Rice: This goes into making the meatballs, so you won’t need that much. 

Egg: Also goes into the meatballs, makes them more tender.

Olive oil: Or any oil you usually use. 

Garbanzø beans: Also known as chickpeas. Use cooked ones, in a can, works well, just drain and rinse.

Season with salt and pepper: For bringing out the flavors.

Ingredients

  • 4 cups water
  • 1 lb chicken thighs (or ground chicken)
  • 1/4 cup rice
  • 1 large egg
  • 4 yukon potatoes
  • 1 yellow onion
  • 1 medium carrot
  • 1 Tbsp extra virgin olive oil
  • 1 14-oz can organic garbanzo beans
  • 1 stem fresh dill
  • salt
  • black ground pepper

How to Make Meatball Soup with Garbanzo Beans

Make the meatballs: First, you would need to cook the rice, then mix it with ground chicken, egg, salt, and pepper.

Boiling the meatballs: In a large pot, add water and bring to a boil. Form balls from the meat mix and add meatballs to the boiling water. Cook for 10-15 minutes. Strain the water into a clean soup pot, and then transfer  meatballs into a large skillet.

Adding the rest of the ingredients: Add potatoes to the soup pot and boil until tender. During this time, add olive oil to the skillet with meatballs and  saute with onions and carrots for about five minutes on medium heat, stirring occasionally. Reduce the heat and season with salt and pepper.

Bring it all together: After you have drained and rinsed the beans, add them to the soup pot along with fresh chopped dill. Bring to a boil and then turn it off.

Instructions

  • Cook 1/4 cup of rice, drain.
  • Mix 1 lb ground chicken, 1 large egg, cooked rice, 1/2 teaspoon of salt, and 1/4 teaspoon black pepper.
