Garbanzo Beans with Rice, Chicken and Meatballs Soup

Garbanzo Bean Chicken Soup

Ingredients
  

  • 6 cups water
  • 1 lb ground dark chicken
  • ¼ cup rice cooked
  • 1 large egg
  • 4 Yukon potatoes peeled and chopped
  • 1 yellow onion diced
  • 1 medium carrot peeled and grated
  • 1 Tbsp extra virgin olive oil
  • 1-14 oz organic garbanzo beans drained and rinsed
  • 1 fresh dill chopped
  • salt to taste
  • black pepper to taste

Instructions
 

  • Cook 1/4 cup of rice, drain.
  • Mix 1 lb ground chicken, 1 large egg, cooked rice, 1/2 teaspoon of salt, and 1/4 teaspoon black pepper.

  • Fill a large pot with 6 cups of water and bring to a boil.
  • Form balls from chicken mix and drop to boiling water. Cook for 10-15 minutes.

  • Strain the water into a clean soup pot, and put the meatballs into a large skillet.

  • Add potatoes to the soup pot and boil until tender.
  • Add olive oil to the skillet with meatballs and on medium heat saute with onions and carrots for about five minutes, stirring occasionally. Reduce heat, and add to the potatoes and salt and black pepper to taste.

  • After you have drained and rinsed the beans add them to the soup pot along with fresh chopped dill. Bring to a boil and then turn it off.
