  • 4-5 medium potatoes cut in strips
  • 2 Tbsp extra virgin olive oil
  • 1 tsp Italian seasoning
  • 2 tsp garlic salt
  • ½ tsp ground black pepper
  • 1 tsp paprika optional


  • Wash and dry 5 medium potatoes.
  • Use a sharp knife to cut potatoes in long thin strips. Place potato strips into a medium-sized bowl, add cold water just to cover the potatoes, and let them stand for 20 minutes.

  • In 20 minutes drain the potatoes, place them onto a clean kitchen towel, and let them dry.

  • Put the potatoes back into the clean bowl, add 2 Tablespoon of olive oil, 1 teaspoon of Italian seasoning, 2 teaspoons of garlic salt, ½ teaspoon of black pepper, and paprika (if using). Mix well with a spoon trying not to break the potato strips.

  • Line a baking sheet with parchment paper and put the seasoned potato strips on the sheet in a single layer.
  • Bake at 425F for 30-40 minutes, depending on the thickness of your fries.

  • As soon as the potato strips start browning on the edges and become crispy on the outside and soft inside, your fries are ready! Take them out of the oven, and serve hot. They start to lose the crispiness as they cool down.

Soaking the potatoes helps get rid of some of the potato starch and make the fries a little crispy.
