Mom’s Quick Homemade Chili with Taco Seasoning and Veggies

All you need on a autumn, windy weather is a bowl of fresh chili. My mom shared this so quick chili recipe with me, that I just had to share with all of you. It is such a fast meal, but very satisfying and full of vegetables and beef. The best part….. it’s all in one pot! I just love these kind of recipes, where basically no dishes to wash after. 

What do I need to make this recipe?

  • 1 Tbsp of extra virgin olive oil
  • one pound ground beef
  • 1 yellow onion
  • salt
  • 1 can (15oz) organic diced tomatoes 14 oz
  • 1 clove of garlic
  • 10 oz bag of frozen mixed vegetables
  • one can (15oz) of organic red kidney beans 14oz
  • pepper
  • 1 liter (946ml) of broth (chicken, beef or vegetable)
  • 1 pkg of taco seasoning (1/3 cup)

Directions: 

  • In a large pot heat up 1 Tablespoon of extra virgin olive oil.
  • To the pot add in 1 pound of ground beef, 1 teaspoon of salt, 1 teaspoon of pepper. Sauté for 7 minutes stirring occasionally.

  • Chop 1 yellow onion, add to the beef.  Sauté until onion is soft (5 minutes).
  • Add 1 can of organic diced tomatoes with juice and 1 minced garlic clove.

  • Into the pot also add 10 ounces of frozen mixed vegetables.

  • Also add 1 can of organic red kidney beans. Stir all.

  • Add in 1 package of taco seasoning (1/3 cup)

  • Pour in 1 liter of broth. Bring to a boil.

  • Salt and pepper to taste.
